How we make our chocolates

  1. POLISH

    First we polish our clean molds. chocolate reflects the surface that is it tempered to - the cleaner the mold, the shinier the bonbon

  2. PAINT

    Then we paint each mold, sometimes we hand paint with paint brushes and sponges, sometimes we use an airbrush for smooth even color coverage

  3. SHELLING

    After the cocoa butter “paint” dries, we fill the molds with plenty of chocolate, tap out any air bubbles, and then return any excess chocolate, leaving only a thin shell

  4. FILLING

    After the shells dry, we hand pipe our various fillings inside, leaving a little room at the top, and let set overnight

  5. CAPPING

    Once the fillings are set and crystallized, the bonbons are closed off, or capped, with more chocolate

  6. CRACK OUT

    After the chocolate cap has dried and sealed in the soft ganache or caramel filling, we can then reverse the mold and all of the bonbons will release from the mold, ready to be placed into the case
